Veg-i-licious Quesadillas

Serve up some warm, cheesy vegetable quesadillas for lunch.

What You’ll Need
  • 2 six-inch flour tortillas
  • ½ cup baby spinach leaves
  • 2 white mushrooms, sliced
  • ¼ cup shredded mozzarella or swiss cheese
  • ½ cup prepared salsa
What to Do
  1. Place a tortilla on a microwave-safe plate. Cover the tortilla with spinach leaves.


  2. Add the mushrooms and sprinkle the cheese on top.


  3. Adult: Cook in a microwave oven for 20 seconds or until the cheese is slightly melted. Remove from the microwave.
  4. Top with the second tortilla. Adult: Cook in the microwave oven for 10 seconds to heat it through.
